Hello loves, happy Monday!! If you follow me on Instagram I posted in my insta stories that I have been a Vegetarian for 1 1/2 years, but also that I wanted to start cooking more constantly again! I am SUPER indecisive when it comes to making decisions about food, so I inlisted y'all s help within my insta stories! Behold the insta poll! This tool with in insta stories is pretty awesome because I get to ask silly and serious questions that gives me feedback on what you guys want to see for and on the blog!
Saturday I gave you all 2 choices between General Tso's Cauliflower or Eggplant Meatballs! General Tso's Cauliflower won! I was kind of excited because I actually LOVE cauliflower so much! Sunday morning I got all my ingredients and decided to make a side with the Asian inspired dish! Stir fry Zoodles it was. AKA: best noodles ever because they are made out of zucchini! If you haven't tried zoodles yet you are truly missing out! Okay let's get cookin'!!!
How to make General Tso's Cauliflower:
What you'll need:
1-2 heads of cauliflower (Depending on family size or how hungry you are!)
1 cup of flour
1 tbsp of cornstarch
Season salt and pepper for taste
-For the sauce:
1/2 cup water
2 tbsp dark soy sauce
2 tbsp rice wine vinegar
2 tsp hoisin sauce
2 tsp sesame oil
2 tbsp granulated white sugar
2 tsp cornstarch
6 dried red chilis (optional)
2 cloves of garlic minced
2 1/2 tbsp of brown sugar
2 scallions chopped up
1 tbsp of Sesame Seeds
Step 1: Cut cauliflower into bite size florets.
Step 2: Grab flour, cornstarch season salt, and black pepper mix into a bowl. Coat the cauliflower in the batter and set aside.
Step 3: Pour the vegetable oil in the pan or fryer and let it heat up, and add a slice of potato into the oil (my mom says it helps the food you're frying to not be super greasy #shewasright) Once it's done place only a handful of cauliflower into the pan or fryer and fry until a little golden. Take out and place on paper towel to drain. Fry one more time until desired golden brown and place on paper towel to drain. Set aside.
Step 1: Grab a medium bowl and add in the sauce ingredients except from 6 chilled and down. Mix until white sugar and cornstarch has dissolved.
Step 2: Heat up a pan, add vegetable oil, and the minced garlic. Cook the garlic until it starts to get some color.
Step 3.: Add the brown sugar, stir until it starts to bubble up. Then add the sauce you made into the pan and mix it up.
Step 4: Throw in those peppers girl! (optional) Also add some of the scallions, and sesame seeds to the sauce.
Step 5: Once sauce is at a desired consistency, add in your fried cauliflower and coat with sauce. Place in oven to keep warm, now it's time to start on the zoodles!!
How to make Zoodles!
Ingredients for Zoodles!
2 tablespoons vegetable oil
4-7 small zucchini
2 yellow onions
1 tablespoon low sodium soy sauce
2 tablespoons low sodium teriyaki sauce
1 tablespoon sesame seeds
This is what a spiralizer looks like: You can by one here.
Step 1: Peal and spiral all of the zucchini and patted dry with paper towel
Step 2: Spiral onions
Step 3: Heat oil with medium heat.
Step 4: Add onions and cook for 4-5 minutes until tender and translucent.
Step 5: Add zucchini then cook for another 2 minutes,
Step 6: Add sesame seeds, teriyaki sauce and soy sauce and cook until zucchini is soft.
Place zoodles into a bowl/plate and add the cauliflower and extra sauce if you're a sauce person like me garnish the cauliflower with sesame seeds and scallions and you're finished! Now watch your family come back for seconds, I know mine did! My brother thought it was soooo good and he rarely likes anything with cauliflower! He also said that it was a miracle that I could now cook! There is a funny story behind this that I will NEVER live down, but I'll save that for another time!
